"Large intestine" would be the English words used most frequently for the item on a Chinese menu. The parts of the large intestine are the caecum, colon, rectum and anus. Given that ricepad described the pork bungs he used as about 25" in length, the subject material included more than just the finale, as can be seen in the photos. The parts of the large intestine closer to the end are fattier and plumper. One Mexican chef told me that this renders the purest lard on the pig.
